Lackluster kitchen performance

My visitor returned from on Saturday after a week back in Spain. This evening she said to me that while she'd been away she had missed my cooking. In fact I think my cooking has been pretty unimpressive in the past few days. I was home alone last week, and my appetite's not what it usually is due to heat, humidity and a little over-excitement too, so I was having bits of old bread and marmite for dinner etc. So I need some sort of kitchen inspiration or something, because at the moment she's not getting the same standard she was getting a couple of weeks ago.

We have been coping with the heat and humidity by making up salads and keeping containers in the fridge to mix and match as fancied. Currently there's quinoa with pecans, shallot and mint, beet and grapefruit, black bean, corn and poblano and broccoli and almond.

Grain salads are good. I'm especially into the quinoa at the moment and it doubles beautifully as breakfast cereal. The current version was a cup of quinoa (uncooked measure so maybe three cups cooked) a handful of pecans, three largish shallots sliced really fine and a small handful of chopped mint. Seasoned with salt, olive oil and lime juice. It's really very, very good.

In the hot I often make one plate dinners - one big plate that people help themselves to - containing salad greens, blanched and cooled green vegetables like beans and broccoli, sometimes little potatoes, capsicum, herbs and a small amount of lean and tasty protein - e.g. marinated sliced chicken, steak, lamb, tofu - and a strong flavoured dressing - sometimes made from wine and deglazing the pan or sesame oil/soy or lemony.
